How to log device data to FileManager files?

I'm looking to log device data to file(s) in the FileManager space. I have done this once before and literally stumbled through a bunch of steps and it was working fine. That piston or configuration has been deleted and now I can't seem to recreate it.
I believe there was a file for each value stored (i.e. garden temperature). The files would grow as more data was collected.

Is there some documentation or "tricks" to accomplish this?
