the child devices are now behaving the same as the parent in that they change the state of both channels instead of just one.

This is a typical Tuya device behavior when paired to a non-Tuya hub or non-eWeLink hubs…

Change the driver to Zemismart ZigBee Wall Switch Multi-Gang driver and then pair it again to your HE hub (without deleting it, just pair once again).
