Interesting device. Do you think it could be used to measure snow depth? i.e. will it simply measure a distance and then report on changes (be it snow, leaves or any other kind of difference from initial distance?)

I think that the product is not changed - this is the only one Zigbee version of the various models offered by this seller on Amazon :
Note, that what is sold on AliExpress has a slightly different firmware. However, both the Amazon (TS0601 _TZE200_lvkk0hdg) and the AliExpress (TS0601 _TZE204_ya4ft0w4) models are supported in the driver and both devices were tested by different HE users.
Just stumbled upon this and I'm thinking salt level in a water softener system, wondering if this could be done or would the salt scatter the ultrasonic waves all around and be unreliable? Anyone that has one of these and a water softener be able to test it out?
I am also in doubt that if the salt scatters or absorbs the ultrasonic waves, then the measurements may be unreliable... Probably we can ask the seller?
@jw970065, the water surface in your fishing pool is probably not very calm (there are fish inside!). Are the distance measurements stable, or do they vary?
It remains very stable, and the error in the shaking of the water is about 1cm. (Based on the water depth of 60cm)
This is temporary, and it will be the same with other survey tools.

I am (almost) ready to pull the trigger on this water level sensor.
I have doubts about this device working on an underground water tank. I guess I would have to place a repeater very close.
I already figured how to look at the water level with an app I already have, that I have used for rain level visuals for a long time.

This is made with an app called Tile Master by BPTWorld, although they are no longer maintained , and you can adjust the scale, and the colors that show the level at a specific moment.
You can still get the app from the developer’s site.
In this case you see black bars because it hasn’t rained lately around here, but it would show blue bars on the filled levels, and where the level is at the moment it would show a gray bar, and above that, black bars.

I'm planning on adding this (ME201) to measure my heating oil tank. I see there is a Zigbee version and what appears to be a WiFi/Zigbee version.
Is there a reason to pick one over the other (ignoring the phone app)? I plan on using it with my C8
I was originally going to build one but at this price it's not worth the effort.

Make sure you purchase the Zigee version from the link in the top post.
Check the Specifications section - the model must be ME201WZ
The WiFi versions can not be integrated directly into Hubitat.

ME201WZ = both Zigbee and Wifi.
I don't see a reference to ME201Z on the link... But the content may change, as I am in Europe.
The best approach is to write to the seller - search the web page for ''Message' button :
They are rather responsive and cooperative (consider the time difference).
Ask them the confirm that you are ordering the Zigbee version.
@JohnRob I got a message from the seller - ME201WZ and ME201Z are the same product. Ther is a small mistake in the product description page, they will fix it.

It has threads on it that might be better adapted to a fuel oil tank, which I originally had thought I'd use it for.
