Can my Habitat C-8 Pro be powered by any USB-C power source, provided it is at least 5V/2A, or are the provided power block and cable special in some way?
Is there a reason you're looking to use something other than the supplied power adapter? If anything goes wrong, that is the most likely question you will get before receiving support. (I know this isn't part of your question per se, but it's important for this reason.)
That being said, any 5V USB-A power supply of at least 2A is likely to work. A USB-C power supply may not, as some have found (at least with the C-8; I don't think this changed with the C-8 Pro) that some USB-C adapters are a bit too smart to negotiate any power to the hub at all. The reason is that the stock power block's orientation and size make it so that my wiring cabinet door will not close. I have a narrow block that will fit perfectly.
If it is a USB-A block it will work.
A bit off topic, but something to think about, I have mine plugged into a slim power bank to act as a UPS. Hubitat just sits on top of it. It provides 3A from the ports. It is nice to have the hub survive power failures, without needing a big UPS box. I don't like the idea of the hub going down by just getting power cut off, I like to do controlled shutdowns/reboots if possible. Originally it was to isolate the hub from any possible powerline interference when I was having some issues (was not the case) but it does work great as a UPS.
I have been using it about a year now with no issues, and I did have one power outage. The hub just picked up where it left off as soon as the power came back after a few hours. The power bank is 10,000mAH, I imagine it can run the hub for quite a while without power.
Can you share your power bank?
There are a few that people have detailed on here before. Some use the Talent Cell ones. I have a Konnected one that helped today (we had a 5 minute outage this morning) I got it from Amazon UK:

The key with the USB power bank/UPSes is to make sure they have a true UPS mode and don't switch the output during power loss and/or recovery. (And also that they output enough power, but that shouldn’t be an issue with a single hub.)
I’ll give the Konnected unit (assuming they only have one SKU) a thumbs up. I’m using one on a RPi and haven’t had any issues with the switching during events. I think it’s a safe guess that it will perform equally well with HE.
I also had a TalentCell model (can’t recall which specific one, but I can come back if it helps) on my C7 before reconfiguring my setup and had no issues. It had a long life, too. Over 24 hours powering only the C7.

I have my my hub, my Aqara hub, and my security system control hub on CyberPower UPS and it works great. I have a mini computer coming to run HA and I am looking at a supply for it. Problem is my install point will be accross the room from the others so I will need another supply. The CyberPower is just to large for one machine.

I would love to reduce the number of adapters, i have exceeded the power strip space, again.

Any USB-A supply with >=1A (2A for Pro) should work because they will always supply 5V. The only caveat would be if the voltage happens to be unstable it may cause z-wave issues but this has only been found with PoE thus far for some reason.
The USB-C supplies / cables can be hit or miss depending on how they "default", some will not supply voltage unless the device does negotiation, which the Hubitat hub does not. I think it can be mitigated with the correct cable but not totally sure, best to just avoid if possible.

Me too, initially, but I had one die on me. With only the little load of a hub on it, it's always at 100%, and it only worked for an hour or so when actually needed. I got another one but cycle the charger on it with a rule.
