What are the hub(s) power requirements?
I'd like to use it portable at festivals for controlling lights. Will 5V DC work or does it require higher voltage by the USB-C handshakes? How much current and total power?

All hub models only work on 5V, and even on the USB-C models, if you have a USB-C PD adapter that is trying to be fancy and negotiate, you may find that it doesn't work at all (not uncommon for small electronics like this but may be surprising if the cable fits). I think the adapter that comes with it is a 2A, though at least before the C-8 Pro it was reported to be fine with a 1A adapter (not sure if that actually changed, but both are common enough I don't see a reason to risk it).
However, keep in mind that the only supported power configuration is with the supplied adapters. Is there a reason you're looking to change? In particular, many PoE adapters have caused hard-to-troubleshoot Z-Wave problems for some C-8 Pro users, among other issues you might face with unofficial solutions.
I have 2 C-8 Hubs plugged straight into the USB (not c) outlets of a Cyberpower 1500 UPS for a couple of years without any issues. I think the combined output is only 2.4 amps.
It definitely is a 2 amp at 5 volts DC Power Supply.
I'm running a buck converter (step down) on my 12 volt house battery...
