I don't have access to the the old email admin that is associated with my hub, how can I change the admin email address with out being able to access the old email address account?

I would say support probably can help you change that email, but they may ask for proof of purchase, and/or the hub ID, or other proof that you are who you say you are.
If you need to wipe the hub and start over I think a full reset from the diagnostic tool will clear the admin account off it.
If you do not want to wipe it then support will have to fix it for you and I think your best way to get in contact would be to fill out this form: Account Issues – Hubitat Support
