I've successfuly added the Kasa HS300 as a device and I am able to pull the power monitoring data - I am using the Kasa Integration application to do this.
I also have several KP125M plugs and added those through the matter integration. I am not able to pull the power monitoring data. Has anyone found a way to do this?

To do this with matter, you need a device that supports the latest Matter 1.3 spec - Energy management wasn't in V1.2 or V1.0 -
I don't believe the generic matter drivers in HE support this (yet), and it's also a question of what version of the spec your Kasa device supports. Bottom line, reveiew the device firmware release notes, and you need V1.3 or greater - Hopefully, some of the required infrastructure on the HE sides get added in the V2.4 release, which is supposed to have some matter improvements - But no assurances about if V1.3 support has been added across the board.

What device driver are you using? I am using tpLink_plug_em from djgutheinz and it works...
