Curious question. Is there any way to map a Zigbee mesh using the device endpoints reported by devices, or are these not exposed anywhere? I know endpoint: 1 is the hub itself, but I'm unclear about finding the others...
Hubitat does not provide a way to do this. The only way I'm aware of currently is to use the XCTU software, which you can use with an Xbee. An Xbee also makes a fantastic (and Xiaomi-friendly) Zigbee repeater, by the way. There is an entire thread dedicated to these here: Everything Xbee
