So I have flashed the custom firmware to this device for it to be able to talk zigbee. I used the steps on this guide.
I was then able to get it to be added to hubitat and added it as a 'Generic Zigbee temperature/humidity' device. With that I am able to get both temp and humidity readings from it.
So if you have one and don't want to setup BLE proxies and the like this seems like a reasonable option.
