There have been several Unifi updates since then ..... including the recent update of the Network app from 8.6.x to 9.0.x.
I think that may be the crux of the matter.
From what I remember, many of these networking devices make changes to settings when they get updates. That may have turned on something like a virus protection, changed some setting in a whitelist/blacklist, and so on.

Not that I don't trust you, well actually I don't, not you specifically, but anyone. Have had people say it works fine before only to find out they were pinging from their PC, not the hub.

Doing a soft reset on hub
got a failed, checking network setting...
Take your hub out of your private VLAN. The hub has obviously been walled off from the internet. Or it has been walled off from accessing a DNS server.
Does ping work from the hub if you try 1.1.1.1?
Yup need to know this too. I gave specific instructions because both ping tests tell us different things.
unifi updates did make changes to vlan.... That crazy and I will be mindful!

Something is awry. You have some old cached DNS data. According to what I can see, cloud.hubitat.com should resolve to these IP addresses:

It is possibly location based on what IP's you actually get for something like this. Mine was totally different as well.
