If I change the Mode from Heat to Off or Cool to Off, the mode changes but as soon as I click Done on the Thermostat Scheduler page, the Mode changes back:
If I click on Apps in the navigation pane without clicking Done, the mode remains Off.
Mode is not supposed to be set by Thermostat Scheduler:

I'm not able to reproduce this. Could you try one thing for me please: Instead of hitting Done after setting Mode to off, hit Update. See if the mode is still off after that or not.
Also, can you show a screenshot of the Current States from the thermostat device page for one of these two thermostats.
Please be sure that logging is on for the app, and it would be helpful if you could show the entire app setup page rather than just the table as above.
Mode is set to Heat in the Control Thermostat Manually section, I change to Off, click Update, Mode changes back to Heat.
I'm not sure but based on the logs this has to do with the option you have selected to turn off the thermostat when restricted, and the Update (or Done), turning it back on as a consequence of the appearance of the restriction being no longer in effect. If you don't want this behavior, I'd suggest either not using that option, or not hitting Update/Done after setting the mode to off.
