Thermostat for baseboard oil heater

What thermostat would be capable of replacing this heater with something that is compatible with hubitat?

I would imagine most battery operated Z-wave thermostats would work.
Here's an example below.

Oh cool. Ya I just did some googling and it looks like closed is on and open is off. Not as complicated as I figured. Does that have a driver that functions properly? And can you use another sensor somehow to trigger stuff?

I don't have experience with this thermostat but i believe there is a driver for it. You will have to search the forum for the thermostat most suite your budget and functionality. Any official low voltage thermostat should work. Zigbee, z-wave or wifi. There was some noise about the Zen thermostat of late on this forum.
As for a sensor to trigger the thermostat. You can use rule machine to trigger the setpoint of the thermostat.

The GoControl mentioned by someone else is a good choice. The Zen thermostat is also a good choice. The Zen thermostat has a more modern design. Whether you like that or not is a matter of personal preference. I have heard good things about the Honeywell T6 Zwave thermostat. (There are several Honeywell T6 models, so pay attention to which one you are looking at.) The Radio CT-100 is also fine. It uses the generic Zwave thermostat driver but the generic driver works fine.

Any of these choices will let you change the setpoints and mode via Hubitat rules. Hubitat also has a thermostat scheduler App, but I don't have experience with that.

Once you have Hubitat, I recommend a ZWave or Zigbee thermostat over one of the cloud-based thermostats like Nest, Ecobee, or Emerson Sensi. That way, you are not dependent on the company maintaining its services. Or, worse yet, dependent on something like IFTTT.

Oh ya total agreement with that, cloud based stuff is a giant pain.
