Hi, anyone know how I could get the Sonoff TH Origin or TH Elite to work with Hubitat?
I want to get the temperature read from the probe into Hubitat...
Or if there is another solution with an external waterproof temperature probe, I take that too.

Ecowitt has an external, waterproof temperature probe with a hubitat interface.
I have a Moe's (Tuya based) Zigbee TH sensor with LCD readout that works with Hubitat.
The Tuya devices without the LCD work with the generic Zigbee TH driver. The one with the LCD screen is different and requires the community driver by kkossev named Tuya Temperature Humidity Illuminance LCD Display with a Clock.
Although the Moe's device is not currently available on Amazon, there are other brands using the Tuya technology that are available.
Did you ever find out how to get the temperature into Hubitat?
I have a Sonoff THR320 wifi switch with a DS18B20 temperature sensor, and I'd like to be able to use the sensor to trigger things in Hubitat.
Alternatively, are there any similar switches with work with Hubitat?
