I cannot figure out how to remove face id from the app. Anyone?

Hubitat isn’t there
This is not a feature built into the Hubitat app, so you must have used something built into your phone OS to do it instead. In other words, this is more of an iPhone question than a Hubitat question, so if you need to do further searching on this issue, knowing that may help.
To remove, assuming this (or the reverse, really) is what you did in the first place: long-press the app icon and choose "Don't Require Face ID" from the menu that pops up.
Well then...

There is no option for Face ID there either. I looked at all the obvious places. What's going on? The app is super buggy.
Like @bertabcd1234 said above Face ID isn't part of the app, it's part of the iOS security and authentication module.
You probably added it by accident. If you hold down on the hubitat icon like you are going to delete it, you should see Don't require Face ID.
AFAICT there isn’t an option for the Hubitat mobile app to use Face ID.
This seems plausible. I’m not sure when this option was added to iOS. Apparently it’s now possible to secure an app with Face ID even when the app itself does not have a configurable setting for locking the app with a pass code or biometric ID.
Again, this has nothing to do with the Hubitat app per se, but rather how the OP chooses to use iOS security features (or perhaps accidentally activates them).
