The answer to my woes was a 30 minute log inspection by support and a suggestion of changing channel; I went up to 26 and the devices immediately paired. What magic was involved I have no idea, but I'm a happy bunny now I have these sensors integrated (again).
So if in doubt, try a higher channel (I'm sure I tried lower channels and that didn't work; but I could be fooling myself as I felt like I had tried everything!)
