Hello all. I’m trying to decide which smart outlet energy monitor will best suit my needs. I’m going to use it to monitor power when a theater projector turns on, the room lights will dim and turn back on when power to the projector is discontinued. Suggestions zwave, zigbee, wifi or matter.
Before I brought my TV's into Hubitat via Homekit I used the Third Reality Zigbee Smart Plug with Energy Monitoring for this exact purpose. I also use this same plug on my washing machine. Some on here have noted about them being chatty but I had no issues with four of them deployed. I only have the one in service now but still no issues. Amazon is the most popular place to get them.
I use Sengled plugs with power monitoring for my laundry rules, works well for me.
+1, I use it for my washing machine "done" announcement. Inexpensive and reliable.

I also agree with the recommendation for the Third Reality power monitoring outlet. I purchase them in packs of four as I find them to be incredibly useful. Using generic drivers, some users found them to be chatty. That issue was alleviated by the community driver specific to that device. The user driver is Third Reality Power Meter Plug.
I also have a Third Reality power monitor on my projector. I use it with a virtual switch and an IR blaster. I use the power reading to keep the virtual switch in sync, so I use the switch to turn the projector on and off. So, pretty much the same as you, when I activate "Screen" scene, it turns on the projector switch, which sends the IR command if the projector power shows it is off.
It also flips the virtual switch on if the projector is turned on manually, when it sees the power rise. I don't have the room switch over to Screen scene when the projector is turned on manually, but that is a good idea! I should add that.

I am assuming you use this driver. Did you get it from HPM? Does it allow to slow down the power reporting?
Avoid the Fibaro Z Wave Outlet. It works fine for power monitoring, but on all of mine (about 5) the manual power switch has failed so it has to be turned on by command (a pain if teh hub was offline or a rule has failed)
This is the one I use. Never seen it on HPM.
other than the aeon clamps i use zooz zen15.. very good and not overly chatty
The community driver is available on HPM. It works well to eliminate chatter.
