I was trying to set up a new rule, and when I went to add the required expression, I see this Mode option called 'Sunset' that I've never seen before. It doesn't match any of my usual modes. And another mode called 'Bedtime' is missing from the list. Check out the screenshots below. I'm on C-8, running version 2.3.8.139.

I don't have an answer about sunset, but Bedtime isn't missing. It's right there after Away.
Actually, I do have an answer about Sunset. "Set mode at times" isn't the full list of available modes, it's only the ones you're using at certain times. So it makes sense that there could be modes in the drop-down that aren't in that table. Go to {hubIP}/modes/edit and you should see Sunset there and should be able to delete it if you're not using it.
