@gettimhere, to help diagnose your issue, what platform version are you running? Have you upgraded?
Currently running 2.3.0.124. Just spotted there is a new version available to I'll update it now just in case that makes any difference.
I was thinking (well to be fair others were on my behalf 
) that the most recent platform release may have introduced a different behaviour. All good, there is still one or two avenues to explore.
FYI.. when we were testing, I was on version .129 and today I'm running the latest version .130 and the drivers have been working the same as we left off.

New Version - 1.0.12
This hot-fix will hopefully fix issues with temperature changes and fan speed adjustments on the European MELCloud platform (and maybe elsewhere). This was most recently reported by @mikkomattip, but I also expect this will resolve some of your errors @gettimhere. Apologies for the delay in getting back to this.
We'll hopefully find out soon if it has fixed these issues.

Hey @sburke781 I had to reinstall the device after some weird hubitat behaviour over winter. I can turn on/off by setting the cooling mode, but on/off themselves don't work. Not a big deal.
But the status won't update. If I turn off via the app or via a remote, the device status never updates. I've set to 1 minute for polling. Manually clicking refresh doesn't do anything either.

@michaelahess - Can you please check if you have any logs relating to the device that represents the A/C unit itself. Most of the logs are recorded against the parent device, but some will appear against the A/C unit, which I suspect may be happening in your case. Try hitting refresh again on the child device and keeping an eye on the logs.
I am assuming that there is still the bug of sending thermostat commands from rule machine that the temperature set point doesn't update in cloud? Changes in hubitat device/tiles occur however.
I've come back to looking at using the wifi adapter again. Seems modes and fan change in cloud from rule machine, but not the setpoint doesn't. Tile changes seem to update the cloud temperature however... I know that you've had plenty of focus on local control for those abroad of Australia/NZ so likely haven't had time..... So sorry for bringing this up again but I'm a little lost right now with using this.

I'll get the logs. For now I'll step through a repeatable procedure if that helps as log hard to grab at mo.
Cloud set as heat 25 degrees.
Turn off at cloud.
All fine so far...
Use hubitat tile to turn on with heat 23.
Cloud shows heat 25 (not 23 degrees).
Adjust tile from 23 to 23.5.
Cloud now shows 23.5.
Do steps in cloud again.
This time send hubitat rule command heat 23.
Same outcome as turning on from tile. Cloud still shows heat 25 degrees.
Send another hubitat rule command but this time with 23.5 degrees = no change to setpoint in cloud. Only changing temp on tile changes cloud. This one I'll need to check more though. Tile steps are repeatable so confident in them.
Ok, I'm pretty sure I know what is going on, at least for most of what you have reported. If there is no change to the set point locally in HE, then the driver does not send any command to the cloud, regardless of the platform (MELView, MELCloud or Kumo). If changes are made outside of the HE driver / device, i.e. the MEL App or a physical remote / controller, and those changes have not yet been sync'd with HE, then no call will be made to MELView, in our case. I'm inclined to remove this restriction, but just want to make sure there's no sequence of calls to this same part of the code that may cause issues. In the end, should be able to fix this. When may be harder to predict. I'll try to take a quick look at the code through the week and see where that leads me.

If I change the setpoint from 23 heat to say 25 heat in the melview cloud, then within 10 minutes hubitat polls and l reports 25 heat as expected.
If I then send 23 heat from rule machine in hubitat (different setpoint than habitat has recorded in device page) the tile changes to that, but melview cloud doesnt. This is different isn't it? Or am I misunderstanding

I have a few problems with my usage of this driver, was wondering if others have seen similar. I'll start with the most pressing ones. I believe I'm on the latest version of the drivers, per HPM: 1.0.16
I'm in the US, working with a Kumo Cloud heat pump.
For the first problem, I've had these logs from the driver for a month+ now:

Not a groovy+hubitat expert, but seems like celsiusToFahrenheit is supposed to be available in Driver code per these docs, and take a BigDecimal parameter. But the most recent commit changed the parameter values to strings (from floats, which were created from strings?). Not sure what the story is there.
The second issue is that the temperature state value on my child device is stuck at 75.2F (24C). It never changes. Looking at debug logs, we get a roomTemp of 25 (not 24 ??) back from Kumo:

Haven't dug too deep into the driver code to understand how the 25 changes into a 24, but also just seems like that roomTemp value coming back from Kumo is stuck at the same value in perpetuity, which isn't great.
FWIW I have the unit in Cooling mode, and the set point at 26.5C ( 79.7F).
Happy to try debugging a bit, but wouldn't mind some expert ideas to get me started. Maybe there's a different property other than roomTemp to look for? I don't see anything obvious in the response in the debug logs though.

1st issue - fahrenheitToCelsius - That is my fault after a recent change. Will send a fix shortly, well I hope it works 
2nd issue of roomtTemp, that is odd. Do you see any errors logged against the parent device? I'll need to dig into that one a little more.
As an extra data point, the Kumo app on my phone says the temp is 77F, which is 25C. Hmm... now I'm wondering if maybe the 25 is getting converted to a 24 somewhere in the driver code, and that's the main issue.
Also, I just went further back in my device event history and saw that the temperate actually has changed in the past, but not since June 21st. So maybe a bug got introduced in the June 19th release of the driver? Suppose it could be the same one related to the exception in the log I mention above, but I didn't see evidence that those exceptions happened frequently / on refresh. Not sure. Still digging.
EDIT: Based on the finding that I haven't seen temp change events since June 21st, I don't think the "25 is getting converted to a 24" theory is at all correct. I think the temp was just 24 the last time we sent a temp change event, and now the temp change event is broken somehow.
I'm hoping it's the same issue. Try updating to 1.0.17 in HPM and see if that fixes things.
