I would like to keep a record of the values reported by a temperature sensor. Ideally the values would be stored in a spreadsheet, but if that's not possible, some other type of report.
Is there a way in Rule Machine to do this? Or some third party app?

There is also a pretty big Node-Red thread where I am sure some users are capturing and storing data. Tagging @aaiyar who might have more insight on NR options.
As indicated by @ogiewon, NR does offer several mechanisms to log data (either locally or on the cloud - via, for eg. Google Drive). There are also plenty of data visualization options available (via the NR Dashboard). For example, here's a graph indicating the temperature average of 8 temperature sensors in my house (yellow line) vs the temperature recorded at the thermostat (orange line).
All of this is pretty simple to setup once you're familiar with NR. But it take a considerable investment of time/effort for me to become comfortable with NR.
