A year later, there is one thing I wish someone had suggested to me: while I had the electrician here and the old kitchen was gone (e.g., empty room with bare walls), I should have had them run power to the insides of the two pantry closets. This would have easily let me put LED strips there that go on when the door gets opened.
This is along with having overcabinet and undercabinet lighting.
