Anyway to get printouts or PDF’s of devices and other information from Hubitat?
Nothing systematic or apps-based exists that I know of, but have you tried printing (or copying-and-pasting in a spreadsheet, for tidying up and later printing) the Devices list you see at http://[hub-ip-here]/device/list
Another (mouse-based) way to grab a list of Devices is to visit Logs > Past Logs and click Filter by app/device near the top, which will pop up a list of known Devices (plus a few other entities). Beginning at the end/bottom of that list, click and drag up to the top, to highlight all entries. Click CTRL-C to copy the list, which you can paste into any document and then print off as a PDF as needed.
One final method I should mention involves going to Settings > Hub Mesh > Local Devices, where you will be presented with a comprehensive list of Devices installed on the hub, shown in columnar format. This page is suitable for printing as-is if that's all you need. Note that any Child Devices will appear tallied up with a single entry because the list does not expand those categories.
You could use this to export info to a CSV, then clean it up a little and convert to a PDF
