Or, just have them always on.
Not really an option. The stairway leads to a couple of bedrooms and a loft that does double duty as a sleeping area when we have guests and leaving the LED strip on lights up the loft quite a bit.

Why not to use a single channel of any RGB(WW) controller?

That's a very good question. I've never used one so I didn't even consider it a possibility. Any recommendations?
I am using ZEN31 and Fibaro RGBW. In your case you can use just White Channel (actually
any but White is somewhat more logical). There are many other Zigbee or ZWave RGB(WW)
strip controllers. There are even few combined PS + RGB(WW).
But my main strip LED projects powered by PixelBlaze. It gives you control for every single
LED in a strip. I have 7 Pixleblaze projects running.
