I'm not able to reproduce the problems, except #2 which is somewhat of a longstanding oddity. You do need to authorize the variables in the app in the same way as devices, so I suspect that's what you're seeing in your two actual dashboards (and the differences between them).
You need to use the "old fashioned" method of authorizing them through the app, as I mentioned above (the Hubitat Dashboard child app for this dashboard).
I would not suggest this approach unless you really need one for an app that does not work with variables but can work with a device/connector of an appropriate type. Hubitat Dashboard is not one of those apps.

I'm still having an issue with this.
I'm trying to add a Hub Variable to a particular dashboard. How do I go about selecting it (or authorizing it) for inclusion to the Dashboard on the following screen:

When I click on the name of the Dashboard, it goes into the Dashboard itself.
That gives me a choice of Devices or Variable, but it says :
For those who come after, and are puzzled by why I can't see on my machine the Hubitat Dashboard Configuration page, I would like to announce that it's due to the differences between Windows/Chrome and Linux/FireFox.
On my Linux/Firefox machine, I cannot see (and cannot go to) the Hubitat Dashboard Configuration screen.
