When I upgrade to the latest Hub version, will the new dashboard be forced on me, or can I still use the old one for now?

No, you can continue using Hubitat Dashboard (or even create new ones). Both Easy Dashboard and Hubitat Dashboard -- assuming these are what your question is about -- are available on all hub models and all hub platform versions since the latter was introduced, and there are currently no plans to change this.
