I would honestly not touch anything right now, especially DO NOT delete the Hubitat app or echo devices, it will not be able to add them back again, due to the issue @jkudave linked to above.
I think just fixing your cookie server should be ok and not break anything, but keep a hubitat backup handy in case you need to go back to a working setup.
