Translating Day & Evening to the (new) Mode Settings is simple. But ... Night seems impossible. Have you managed to translate something like this to the new Mode Setting?

The formatting of the page looks a little wonky, but I believe it’s going to trigger at the later of either sunset+30 mins, or 2000 hours.

True. It works well on the old Mode Manager. For at least one, maybe two years. I use it to control dimmers & switches.
How could I translate "Night" to the new (fancy dancy) Mode Settings? Can it be done?

Oy I misunderstood (since I haven’t actually tried the new modes app), but now I see.

I agree with @jkudave, there’s no compelling need to recreate what already works, and that’s why I haven’t used the newest mode app.
Settings - Modes is a very basic, pretty-looking tool meant to get someone new to home automation started with modes. It's not meant as a replacement for existing apps. There will probably be some feature creep based on the feedback like yours, but it will be limited by design.
Keep the Mode Manager, it works
Got it. Stay with the two-step. No fancy disco stuff.
