Would like the option to sync Rooms between Hubitat and HomeKit.

Makes sense too having similar layouts across the eco systems.

I second this. I have the same exact room names in Hubitat. I was surprised new devices show up in the wrong room in HomeKit.
I don't think its possible (and I say this having written one of the several homebridge based HomeKit plugins for Hubitat; see homebridge-hubitat - npm). The HomeKit Accessory Protocol (HAP) does not allow you to specify a room during device creation - it has to be set via the iOS Home app.
