Both the Inovelli Zigbee (recommended) and Matter (I own this) fan canopy modules are available - Given no existing wall switch, this seems like the easiest route. Blue Series Smart Fan/Light Canopy Module | Inovelli
Just add a button controller (Lutron, Zwave, Zigbee) for lights and fan speed (and tie to Alexa, Google, RM, etc.)
Does the Bond solution work with AC motor fans?
I'm not familiar with how the Bond Bridge works...
I may end up ordering the Inovelli canopy module and initially use it without the matching Inovelli wall switch as you suggested. Using a button controller is a nice work-around for the lack of a wall switch 
If the fan uses an RF remote, the chances are good that the bond device will control it. I think you can check on their website to see which fans they control.
It will also do many IR remotes, but you need it in line-of-sight.
