This is in the hue app automation. If I can schedule literally this scene, great - but if not is there a way I can gradually fade in lights to mimic a sunrise?
You can also do this with Rule Machine. You can also trigger Hue groups, and there's also a community app named Advanced Hue Integration that lets you trigger Hue Scenes.
Keep in mind, that just because you use the Hue Bridge Integration with a Hubitat hub, it doesn't mean you have to stop using any of the scenes that run on the Hue Bridge. That's the really nice part about owning a Hue Bridge. You get to have it integrated into Hubitat, and yet you can still run it just as before and continue using all the cool Hue apps if you want.
Yes and no. That particular sunrise scene is only available via Wake up with light in the Hue app. It's not a traditional scene that is available in the Hue Scene Gallery. So, if you want that specific type of sunrise, you need to use the Hue app.
With the above said, there are sunrise scenes available in the Hue Scene Gallery. Those can be used in Hubitat via one of the community Hue integrations (Advance Hue and CoCoHue; I use the latter personally). If you wanted to go this route, use one of the sunrise scenes but set it to come on at 1%. From there, you can trigger that scene in Hubitat to come on and have a follow up rule to raise the bedroom group to 100% over 30 minutes.
