I've been getting everything updated and cleaned up on my hub this weekend and it occurred to me that with the Dashboards link on the left side of the HubUI there's no real reason to have a separate app to get to the dashboards. Are the apps still needed at all?
And if they're not, if I remove the apps will the dashboards themselves remain? (Please say yes)
Removing the apps will remove the actual dashboards.
Some history: the "Dashboards" link itself is newer than the Hubitat Dashboard app, an easier/quicker way to get to the same place. I'm pretty sure sure the app side of Easy Dashboard was just added as a way to maintain consistency and reduce confusion (the classic Hubitat Dashboard is indeed really an app--any user could have written something similar if they wanted), but I don't see that changing for that reason even if it might not be technically necessary in this case.

I like the ability to instantly go somewhere without back spacing or having two tabs open.
I don't need the screen width.
I would request they don't get rid of that.

As long as the older dashboards exist, they’re reachable directly via their URL.
