I have both my phone and my wife's phone location settings for the Hubitat app to be always on. I started having problems today. When I checked on both phones the location setting had been changed to only while app is open. I also noticed that there was an app update overnight.

So it appeared that when the app updated it changed the location settings. Anyone else experience this?

Yup, there is another topic recently posted about this where a few people noticed location not working properly and then realized just what you mentioned, myself included. Hopefully this can be avoided in future updates now that it's happened and been an inconvenience for many.
