FWIW Hubitat doesn’t support ESPHome natively today. There are some community integrations with ESPHome devices such as the RATGDO so it might be possible. That is an expensive sensor so not sure you will see too many people purchasing it and wanting an HE integration.
You could always setup Home Assistant and use HADB to integrate this device with Hubitat like many of us are doing with various devices where HA has a local integration, for example Ecobee.
