I have an Aeotec Water Sensor 7 that also has humidity and temperature reporting. I've tried to disable humidity altogether and limit temperature reporting to 5 degreeF changes.
For some reason it ignores the settings. Here is the log:
As you can see, humidity is being reported and temp is also with just a tenths of a degree change.
How long has it been since you made the changes, and did you either wake the device or wait for the wakeup interval (often defaulted to something like 12 or 24 hours)? The logs will usually note when this is the case, though generally only after a Configure or Save Preferences. The device detail page will also sometimes have a an attribute or state value that reflects this, too, though this varies by driver.
