I forgot to remove my old Hubitat C5 from my wifes iPhone15 Pro and I cannot get the latest version of Hubitat to load on her phone because it can't find the C5, apparently. I put the C5 Back online and tried to remove it from her iPhone without success. any insight would be helpful

Delete the app and reinstall it.
When you log in, it will ask you what hub.
If it does not see the new hub you may need to add her account as a guest to that hub.
