I recently bought a Fibaro Leak Sensor and just noticed it is connected via S0. I don't remember choosing this during inclusion. Is this the same as No Security?
No, S0 is the first generation of Z-Wave security. It's generally preferable to avoid since it's less efficient than both S2 and no security, but some devices don't give you a choice: door locks and other barrier devices that require security but don't support S2, and a few device that support either S0 or no security but not S2 and don't offer a separate non-secure inclusion mode (in which case the official 700/800-series Z-Wave SDK Hubitat uses will use S0 with no prompt), for example. Your device is probably that latter category.
I have a few Fibaro Motion Sensors that get included with S0 automatically when I pair with Hubitat. My zwave mesh became quite unhappy. I ended up unpairing them and then using a UZB stick and Simplicity Studio to pair it without security. Hubitat sees it with no security and all is happy. I suggest it (esp. if you're having any wonky zwave issues since pairing).
I would have never bought this brand if I knew I had to screw around with a UZB stick to get the right security settings. All my devices are paired with no security. My Fibaro Leak sensor is version 3.4. I wonder if there is some advanced parameters or factory reset I can do to fix this.
A leak sensor should be pretty quiet most of the time, so I don't think the S0 will cause you much troubles. For motion sensors it can clog up the radio due to all the active/inactive messages. I have an S0 lock and it seems to be fine.
It could be any secondary controller. I actually have used an old Aeon Labs Minimote as a secondary controller to include devices with no security to a C-7 and then to a C-8. Also use it to exclude devices.
They can be found pretty cheap on eBay, and don't need a PC or any other computer to be used as as a secondary controller with Hubitat.
There's not. I had to use the stick and controller software for all of my Fibaro devices (about 30). Once you've done it a few times it's easy. I agree it's an annoyance and something that silabs should have resolved.
