For my wife to have access to our hub should she register her own email and discover the hub for her account, or are we limited to one email to a Hub?

I assume you're planning to use the Hubitat Mobile App? If so, you can create a portal account using her email address. Then log into the portal using your email address, go to My Hubs, then click on your Hub's black Icon (not the blue URL below the icon!), and then add her account to your hub as a guest (unless you want her to be an admin.)
Please note that this really only affects the portal, as anyone on your home network can connect directly to the hub via its IP address (unless you've enable hub security.)
Then, on her phone, log into the mobile app using her credentials. When it shows you the list of existing devices, click Create New to create her phone as a mobile presence device that can also be used to send notifications to. Configure the Geofence appropriately.
That's it.
