This is probably just me obsessing and looking for things to fiddle with

I have several automations set up in Rule Machine, Simple Automation Rules, Notifications and Groups and Scenes that all work together to give me one button night mode (lights, arming cameras, setting thermostat, delivering notifications of changes etc). After looking them over and having gotten more experience with RM, I am sure that nearly all of it can be combined into one or two rules. Is there any benefit to doing so? Is it mainly preference?

No, yes.

Also, it’s usually easier to maintain and troubleshoot a bunch of small rules, rather than a big rule.

IMHO, Preference is my choice.

It's easier for me to maintain and trouble shoot issues if I keep the RM logic code as simple as possible. This includes using the builtin apps, Motion and Mode Lighting, Simple Automations, Notifications, HSM before I use RM. #KissPrinciple

Plus, I've been burned a few times with a corrupted RM, and had to start over!

save the "RM flexing" for complex single tasks and not basic stuff
