I've re-added the device twice already and tried both versions of the available driver. Any ideas to try?
Every time my ST Arrival Sensor doesn't report the battery levels, I find the battery is really low or dead. Did you try replacing the battery? I would also suggest getting a good battery tester so you can tell for sure, I use this one that works great with button batteries and regular batteries:
When the battery is in yellow or red on this meter, it'll stop reporting battery then will stop reporting presence changes really soon afterwards.
Change the battery, they work with 0 percent of battery so doesn't report.
I've tried two different brand new batteries

The method I found on the ST website was holding the button down until the LED went off. Is there another way?
Nop, that's the correct way. Let me look my 5 devices, maybe something changed after an update.
Yup same info listed. I've clicked configure like 20x on each driver
