So I'm a total noob with smarthome devices, but have a fairly robust tec/programming background. Until I purchased my Hubitat, I've been using cheap wifi devices through Google Home, alongside some Hue bulbs. I understand what is needed to get Hubitat to communicate to Google Home to silently speak commands to my devices, but I have what I suspect is a much more simple question.
I have been using Google Nest Hub Mini's (and Google Assistant) to control my Sonos, Hue, and Wifi devices. As I setup my Hubitat system from scratch, I want to ensure that all devices are being handled by hubitat locally (thru my LAN), rather than having google control them in the cloud. I'm confident I have a glaring misunderstanding about how something works. Let me be specific.
On my prior nest hub, I had Hue lights setup. Did Google Home control them locally through the bridge, or did it go to the cloud? When I setup Hubitat, I added my hue bulbs first, and now I have duplicate devices on google home. Do I need to hard reset my google devices? How do I know google home is controlling my devices through hubitat, rather than through google home as before?

Google to Hue is a cloud integration. So, it goes from your Nest Hub to the Google Cloud, to the Hue Cloud to your bridge.
No, you just need to delete your Hue integration from Google Home.
Every device should only be listed in Google Home once. Remove your Hue integration from Google Home and you will be all set.

You seem to be everywhere on this forum, so if anyone can answer that question, I think it would be you.
My assumption is that the only way to integrate is via the Hubitat cloud, and therefore the same loop as for Hue. I am suffering from frequent, "Sorry, I can't reach HubiTAT right now.", responses from GA. I'm hoping there is a workaround!
Hue is not a cloud integration. It is local directly to the Hue bridge.
Voice assistants require the cloud to perform their analysis of your voice. So, Google Assistant can't run without the cloud, so you have to have the internet to use a voice assistant.
There is no hubitat cloud in the same sense as the SmartThings cloud. The Hubitat servers simply redirect messages to your hub. There is no cloud processing or storage. It's a redirector only.
