Is there a way to remove Medium Low, Medium High and Auto from a Fan Device or Fan Tile? In my case, my Fans are connected to Jasco/GE Z-Wave Plus 3-Speed Fan Controls.
I don't think those other options can be removed. One workaround hack option is to create a virtual dimmer and then using Rule Machine to link it to your fan. Then, you set one rule where if virtual dimmer turns on, it turns on your actual fan and if you turn off virtual dimmer, it turns off fan.
Then set a separate rule with trigger of dimmer level changing. Then actions are IF dimmer is<34, set fan speed to low; if dimmer between 34 and 67, set fan speed to medium; if dimmer greater than or equal to 67, set fan speed to high.
I did similar to select from one of three Echo devices in a dashboard. It's the slider at bottom of dashboard.

That's my understanding as well, whereas with a Thermostat driver you can adjust a supported fan modes attribute to control what is displayed for the user to select, I don't believe that option is available for a fan control device.
