so in the newest firmware update I see a driver for inovelli fan/light switch included in the update... should I delete the driver that I previously installed prior to this update?
No, just change drivers. If it then works, you can consider deleting the old driver after a few days of successful operation on the new one, but it does no harm to leave it, The new one could have bugs, you know. Welcome to the community!
