The difference is that the Insinkerator unit is a small tank-type water heater so it can use a lower wattage heater to get the water hot in its reservoir. The dangerous ones are tankless, on-demand type that do not have a reservoir of hot water and have to heat water quickly. The old "TAANSTAFL (There ain't no such thing as a free lunch)" principle applies. You could waste energy keeping a small tank of water warm for when you need it or you could spend a lot of money getting a proper circuit installed so that you can operate a tankless heater safely.
The under-the-sink inline water heaters like aaiyar originally posted just don't have enough wattage to heat any volume flow of water effectively. My wholesale house never carried them. The big box stores did and were flooded with returns. T&P valves, I wonder??
The Insinkerator model works. I use ours several times daily and highly recommend it, It isn't well-suited for tasks like washing your hands, though --more for blasting greasy silverware. Since our kids are grown, I have the temp set to 160f so it works fast. I also have it wired to a zigbee switch so that HE can shut it down overnight.
BTW, I can tell if my wife is home by going to any faucet. If she's home, it'll be warm. She runs hot water seemingly constantly ...hates cold water.

In the 1930-40s my dad had a electrical-mechanical contracting firm that did work for government agencies, universities, etc. There was one tough old-timer in his crew that did exactly that. AFAIK, he was never electrocuted ...I assume he got away with it because his fingers were very calloused. (I confess, with my callouses, I'll work hot on a 120v receptacle or switch but I don't lick my fingers.)
