I notice the Sonoff S31 ZB lite is listed in compatible devices (and it is, I have several of them), but there are no join or reset instructions given in the Join and Reset Instructions document. It would be helpful if there could be, because the instructions given in the packaging refer to hardware other than an HE hub.
I assume you saw that you can email devices@hubitat.com if the instructions are missing (or wrong) and you happen to have them? That won't help you now of, course, but if you felt like helping others avoid this in the future, it's an option.
For you now: reset and joining instructions on the device side should be the same regardless of hub. Usually this is pressing, multi-tapping, or holding some button or reset hole, and all you have to do is put Hubitat in Zigbee discovery mode--the only Hubitat-specific thing there is, though most instructions should allude to something along these lines as well, though some may be geared only towards that manufacturer's system (note also that on Hubitat, you can do this with or without the device-specific menu hierarchy you can optionally navigate through--that's mostly there to help you and is less helpful if it doesn't have these directions, and as you've seen).
Might be something you've figured out already, otherwise should be something along rhese lines if not!

Factory Reset
hold the configuration button/ (on / off ) button for until the LED flashes, release and it should be in pairing mode for Zigbee.
