Some extra analisys data:
When the Matter brige is paired via Homekit, it seems to work fine. In the Mater settings page you see the gaeway, and it has an IPv6 adress. kkossev's driver "sees" the bridge and I can ping it wit the driver.
As soon as I reboot HE, the connection is broken. The gateway is still visible in the Matter setup page, but no IPv6 adress anymore. The drive can no longer ping the gateway.
When I test the gateway from Homekit, it seems to work just fine, and accepts commands.
So it seems the reboot is borking something in HE regarding Matter?
