I'm still having trouble understanding what Matter "solves"

It might not be - and no one is trying to convince you otherwise. Everyone's uses are different.

Some people want devices to work in multiple ecosystems semi-transparently, though, and Matter can help them with that in a way none of the other existing protocols can.

Well...... With matter bridging they can. For instance if you pair a Hue Bridge with matter to Homekit/Google/Echo, all those devices now are exposed as matter to the fabric so if Hue wanted to it could then read all matter devices on the fabric and send that info back... But you will also be able to pair the hue bridge via matter to hubitat. Echo also accepts zigbee devices, so any devices on there "could" be programmed to phone home as well. It boils down to what they're attached to regardless of the protocol.
