You can create a dashboard that displays the current state of a device, like a switch being on or off and power usage. You can also open the Device Edit page and click on Events to see state changes, e.g. a switch turning on or off or the power usage changing. These same events can also be viewed by opening the rule edit dialog on a dashboard . One other option would be to turn on any logging options for the device and watch the HE logs, though this is typically used for troubleshooting purposes.
A more advanced option is to export events to an external system or database for longer term storage and analysis. Many people who do this run InfluxDB and Grafana on a raspberry pi or something similar.
There are also a few Community developed charting options that make use of the locally stored Event history.

Home Automation more generally and any system like HE is complex and has a lot of elements that go into the overall system. It just takes some time to get to know each part, the terminology and concepts used and how to apply it. So don't feel stupid for not knowing where to look. We've all had times like these...
One mindset that might be useful to incorporate: Lots of people enter smart home tech through the idea of control. "Google, turn on the living room lights." "Alexa, make the porch lights blue." "Siri, turn on the bathroom fan."
Hubitat comes at it from the idea of automation -- things should just happen at the right time. Living room lights come on if someone walks in. Porch lights turn blue at sundown on LEO Memorial Day. The bathroom fan turns on when someone is in the shower. If you need control, it means something went slightly wrong -- either the automation didn't account for some exceptional event, or it didn't work the way you thought.
As a result, Hubitat's built-in control surfaces are, while perfectly serviceable, rarely flashy. They're mostly for the person who sets up and debugs the system, not the normal people who live in the smart house.
So how do you see the current state of the device? By default, on the device status page, so you can check that everything is working. Or in logs, so you can see what happened. You can set up a dashboard, but... should you need to?
On the other hand, there are some REALLY fancy dashboards and dashboard apps out there too!
And, probably like you, I haven't gone there either. I feels it'd be a lot of learning and work for results that I probably wouldn't sufficiently appreciate.
