My main question would be to understand which hubitat model is compatible with my Lutron system (I would have to access it in telnet). Hubitat Elevation C-7?
For the strings, addresses, access passwords I would have no problems as it is my main home system and I have been a Lutron programmer for about 20 years.

All Hubitat models work with Lutron over Telnet. The biggest differences between most models have related to Zigbee and Z-Wave, with higher specs on the SoC under the C-8 Pro being its differentiator from the C-8 (and earlier). See the comparison table on this page:
Are you wanting to add z-wave or zigbee devices? If not, there might be other ways to do what you want.

I believe that is HomeWorks? I use Apple Home. You can connect Lutron Pro hub to Apple Home directly. Not sure about HomeWorks, and not sure about Google.

I don't know the lutron pro hub you're talking about, a connect bridge has never been released for my system. lutron started producing lutron connect bridges from the system after mine, that is, from homeworks qs, where I believe integration with hubitat has no problems. OK - that works with Apple Home, Alexa and Google. Unless you want zigbee or z-wave devices also, I don't know why you need Hubitat.
I don't actually need zigbee or z-wave, I don't have anything from these brands, I wouldn't know what hardware to buy to control the system via google/alexa.
do I need an apple tv? I don't know the apple world, I have the "home" application on my iphone but it doesn't see the Lutron system.
Could you advise me on what to buy and which app to install if necessary (I can do the configuration myself).

You are probably going to have a difficult/challenging time as that processor is quite old. I'm not familiar with the similarities/differences of the older hardware, but is an old integration for original RadioRA. See this thread:
