2 or 3 times a week 2 of my echo's have blurted out "Hmmm..I don't know that one" anywhere between the times 01:00 and 03:30 when there's, been total silence, it may have done it at other times whilst I am away to the fairies???
I like "what did you just hear?" whenever it does something screwy.

Thanks for that. I was unaware, but Iām gonna give that a try the next time it happens to me.
check the routines in your alexa app.. had a similiar think where it interpreted something i said and added a "test" notification earlyin the morning.. i know i never actually did that.
There no routines running or due to run at those times, and also the 2 echos that do it have different names
