I'm doing something similar excluding HA (use Homebridge). My "dashboard" is Apple Home app (for devices) and Node-RED dashboard for graphs etc. All my rules are in Node-RED. The dashboard in Node-RED has a steep learning curve but you can do some really cool stuff with it (I also use it for my Tesla solar dashboard)
