Have a Hub C8 and recently added an Inovelli Red dimmer switch. For some reason, when I add it to Google Home, Google only sees it as a plain switch, and not a dimmer. I'm looking at add voice controls "Google, set dining room light to 50%" sort of thing. I'm using the Inovelli specified driver, which I installed before connecting the switch to the Hubitat. I've reset and did it all over again (including the driver) and no change.
In your device details is Level listed as a Current state? If not, set a level on the device so that Level has a value then refresh the devices in google home and see if it shows up as a dimmer now.
No change; Google Home still sees it as a non-dimmable light.
I tried changing it to a "Switch" in the Google Home App, and that didn't fix it either.
